I actually get my PhD degree from U of Utah.
After you arrive at Salt Lake City, you will have go go to the International office to report your arrival.
U can request a letter from the Internatinal office which will allow you to get your SSN.
Then go to the DMV and apply for a drivers license. Make sure tha tyou apply for both auto and motorcycle. In US, you will only receive one license which will be good for both auto and motorcycle. You usually only need to take a written exam. Also, there is no "large-heavy motorcycle license. Motorcycle license are good for a motorcycle larger than a 125 up to what ever bike you have.
You can then buy bikes. In US, slightly used bike is a great choice. I still own a 1996 BMW R1100RSL which I bought at UTah 2003. I spend 6000 on it with two luggages casees. Before you can get the bike transfered to your name, you will need to purchase an insurance.
In term of riding across US. Asian riders are unusual. But, I only experienced good thing about that. When I ride, people love to talk to me.
Buy a set of good riding gear. The temperture difference will be huge across different location. Enjoy, Utah is the heaven of motorcycle riders.
I lice near Philadelphia now. If you come near my way during your trip. Let me know, I can ride with you for a day or two.
Good luck!!
