我在網拍上面有看到一公斤400的choice牛小排 不是很貴

不過之前大潤發有特價一公斤370的價位就是囉 但是包裝就是黑色壓印的choice

我在等去好市多看完

11號大潤發目錄出來就會決定哪些要去網拍買 哪些要去門市買

家樂福現在特價到12號買美國牛肉滿500送100底用卷

要是吃少量可以去家樂福買一買就好囉


有些事情還未清楚前就下評語說別人很令人討厭是不道德的,
看的懂中文不見得就有中文輸入法可以用,
國外很多實驗室都是有中文字型可以看,但是卻不准灌別的輸入法的,
我相信回英文的那位人士應該是這種情況,
下回別亂罵人了

沒錯,一般的user都不是administrator,英文版的OS要download中文語言包的權限是在administrator手中,所以有時連中文都看不到!看得到中文還算好!灌輸入法就比較麻煩!

i am sorry that i reply in English. The reason is simple, i can't type in Chinese.

however, I usually use very simple English. I think mostly are only junior high school level english. If you read my post word by word, you will find that my sentences are very easy to understand.

the color doesn't matter. different company/reseller use different tag. there is no rules says what color should be associate with certain grade.
i have seen Prime using black with gold. prime using red. choice using blue and red, select using blue and red. there is just no rules on which color should use.

buy from trust worthy retailer. (for example, Costco) NEVER buy from online seller or no name retailer. (are u kidding? buy food online? besides, you don't know where those meat come from.)

i never heard of "beef ribs" has prime grade. If it's not from a well-known retailer, i will be suspicious.

As everyone knows, beef grading is rated as Prime, Choice, Select, and the rest. There are only 1-2% of the beef will be rated as Prime, and fancy restaurants buy most of it.
如同一般所知,牛肉的等級分為Prime, Choice, Select還有 Rest. 只有1-2%的肉會能被評等為Prime等級,而且大部分這個等級的肉都被高價的餐廳買走了。

In my opinion, Choice is the best choice in terms of price and quality. I am a steak lover and 70% of time, i buy choice.
以我的看法,Choice等級是兼顧價錢與品質的最好選擇。我是牛排的愛好者,而70%的時間我都會選擇Choice這個等級。

beef should NEVER frozen. the best temp to store meat is between 0C to 5C. never let it frozen. (but if you want to keep it longer (more than a week, frozen is the only way, although doesn't taste as good after defrost, but better than throw them away)

since you are curious about storage of beef, i can explain in more detail. The best way to store/prepare beef is a process called "dry aging". It put beef in temp between 0C to 5C, sometimes as high as 8C (depends on the place, it is one of the "secret" each beef shop has) however, if put beef above 0C the blood and body fluid will come out, so they use dehumidifier to make the air in fridge dry so the meet will remain dry instead of dripping blood. ( usually it's computer controlled within certain humidity, usually 50% or so, it's also depends on the place)

anyway, it's the process called dry aging. sometimes, you may find 7day dry-aged, 14 days, or even 45days or 60days. (the longer, the tender the beef, if done right)
總而言之,這個過程就叫做乾燥熟成。一般來說,你可能會看到經過七天乾燥熟成,14天,或甚至是45天、60天(有處理對的話,時間越久,肉質會越嫩)

Prime doesn't always taste better than choice or select from my experience.
根據我的經驗,Prime這個等級並不一定總是比Choice這個等級好吃

if you don't like fat, you can cut it out before grill it.
而如果你不喜歡肥油的話,烤之前可以先把肥的部分切掉

also very important. the proper way to grill meet is to grill one side first. When that side is fully cooked, flip to the other side and done. many people flip the meet too often and the moist in the meet will vaporized with heat. resulting in dry and bad tasting meet. (and people usually blame on the meat quality, then they buy more fatty meat to compensate the lack of skill in grilling)
除此之外很重要的一點是,適當的烤法是先烤其中一面。當先烤的那一面已經差不多時,再翻面去烤另外一邊。很多人翻太多次面而讓肉中的肉汁都乾掉了,然後他們會覺得肉又乾又難吃(接下來他們會懷疑肉的品質,而且再來只好買比較肥的肉來平衡他們所欠缺的烤肉技巧)
