Canada is a great environment for kids to grow up (if you don't like TW's politic much ...etc.) However, there are factors you may need to consider; i.e. it's almost a guarantee that you will get a job since you just relocate the job to Canada, but your wife doesn't.

Depending on your position to negoiate your wage with your employer but rule of thumb; the higher the better ... XD ... !!! (If you're a manager or higher, CAD$3.5K ~ CAD$5K or above should consider reasonable.)

You can apply 楓葉卡 (Maple Card) only when you get your 永久居民 (PR) ... "是否比較好" ... nothing to compare actually, you just have to get/apply it (Maple Card) ...

First of all, if you want to immigrate to Canada, you need to be clear which class you will apply for your immigration; i.e. 依親 is only one of kinds and there are others like skills, enterprneure, investment ... etc. Every class all has its own way to apply ... I recommend you to go "CIC" website for detail.
Lastly, monthly expense is difficult to answer you and vary from person to person's lifestyle to judge and determine as well. For example, some areas tend to be more expensive than others, so naturally things are more expensive than others ... rent, education, materials ...etc.
