2. click the restore button.
3. Wait for the restoring to complete...
4. When the device is in recovery mode (the one that says connect to itunes) Push and hold the home and power button for 15 seconds.
5. after 15 seconds, hold the power button for 2 seconds
6. Device should boot and you will be on 2.2.1.
P.S. another way is to put the 3.0 device into DFU mode and just Shift + Restore with a pwned 2.2.1 .IPSW.

試過前面luoyijun0913大大所說的弄成DFU Mode，
但DFU mode後再回復iTunes告訴我找不到可更新的軟體...
我在網上有找到方法將iPod弄成Recovery Mode，
再連上iTunes回復，但在回覆到一半時就出現"不可預期的錯誤 (21)“...
使用Xcode去restore成2.2.1卻是Write Ramdisk error (21)。...
但如果是給他刷成3.0卻沒問題...
而ADC也沒有2.2.1的ipsw可以下載
請問還有什麼辦法可以讓我的iPod Touch降回OS 2.2.1?
