幸運抽中01舉辦活動的獎品但可惜活動當天要上班無法前往,還好編輯很貼心的跟店家爭取到了幫我保留至10月底的福利,趁著放晴的假日北上前往A COMMUNITY,筆者對台北不熟,走出捷運站聞著沿途好幾家餐廳的香味到達店門口時早已飢腸轆轆,

鮮魚取下肉片後帶著鱗片一起下鍋油炸,熟度控制得宜呈誘人金黃色,一切開魚肉即可聞到撲鼻魚香,一入口最先感受到炸至酥脆的魚鱗,酥脆度是會讓咀嚼時發出卡滋聲響的程度,魚肉細緻無過多調味搭配酥脆魚鱗口感層次豐富,

因原本設定的Burrata起司賣光了所以臨時改成這道,

胭脂蝦本人長這樣,照片是筆者去台東玩時所吃的,蝦肉質地屬柔軟不是大家一般印象中脆彈口感的蝦子,

這道菜因要凸顯蝦肉本身的甘美所以僅以中間的檸檬泡沫作為提味,切成薄片的蝦肉柔嫩度更是明顯,搭配一旁的新鮮無花果丁一起食用清爽卻又能嚐到蝦肉本身甘味,

烤蝦頭會在殼內塞入用蝦高湯煮過的義大利米,再把蝦頭烤至乾酥,

蝦頭內的米除了本身蝦高湯鮮味外因烘烤也吸附了蝦膏味,量雖然不多但濃縮的鮮美滋味卻是很滿足的,

這道餐點上桌後會由服務人員現刨義大利Padano起司,Padano起司就是有些餐廳桌邊服務會拿整塊起司(4KG)中間挖洞拌義大利麵、飯、沙拉的那種起司,

義大利麵裹著蝦高湯搭配蝦子、淡菜、蛤蠣,起司刨的很薄若有似無的提味,

麵條本身帶有一點嚼勁,外層裹著濃縮整盤海鮮精華的醬汁讓你嚼到最後一口依舊鮮味十足,
